White or Choc coconut rough slice

I made this slice for a dear friend's baby shower, whom I love dearly. The baby shower was beautiful - it was the first baby shower I have been to! I am very thrilled to announce they are having a big boy. I reiterate, a big boy. My beautiful friend was 32 weeks and tracking in the 96th percentile with a weight of 3.5kg for the baby. A heavy little lump indeed! He will need so much food to come.

Anywho, back to the yummy slice.

This one is dedicated to all the coconut lovers out there - this white or choc coconut rough slice will be your new favourite snack. Just break off a piece and munch while sharing your gratitudes for the day with loved ones. If you're not a coconut lover, then you can trust my family and I - we'll love it for you!

It is so crunchy and textual filled. I prefer the white rough; maybe it is because of the currants? The chocolate one is super dark, FYI - if you prefer milk chocolate, I recommend adding a little coconut sugar or more maple syrup.

White rough

  • 1 cup desiccated coconut

  • 1/4 cup maple syrup

  • 1/3 cup coconut oil, melted

  • 1/2 cup currants

  • 1/2 cup quinoa flakes

  • 2 tbsp mesquite powder

  • Salt to taste (optional, but so good)

Choc rough

  • 1 1/4 cups desiccated coconut

  • 1/4 cup maple syrup

  • 1/3 cup coconut oil, melted

  • 1/4 cup cacao nibs

  • 1/4 cup cacao powder

  • 1/4 cup quinoa flakes

  • Salt to taste (optional but so good)


  1. Line a baking tray.

  2. Mix all your ingredients in a large bowl until combined.

  3. Tip onto the baking tray, press flat using the back of a spoon, a rolling pin or, as I did, the base of a large glass jar. Add a little coconut oil to the spoon/rolling pin/jar to prevent the rough from sticking.

  4. Refrigerate until set.

  5. Once set, cut into square pieces and store in the fridge.
