Pumpkin Puree

INGREDIENTS

  • 700-800g pumpkin (peeled weight)

METHOD

Add extra water to the base of a steaming basket and place on high heat until it boils.


Meanwhile, roughly cut the pumpkin into chunks and remove all pumpkin seeds and peel (the end weight should be 700-800g).


Add cut pumpkin to the steaming basket and steam for 20 minutes or until very soft and mushy.


Place steamed pumpkin into a blender and blend on high until smooth.


*The blended pumpkin should form thick pumpkin soup consistency. If not, add a little water until a thick pumpkin soup consistency forms (it should not be required).


This recipe makes around 700g of Pumpkin puree - perfect for Mac 'N' Cheese.
