Potato Pizza’s

INGREDIENTS
Potato (white or sweet potato)
Zucchini
Tomato
Capsicum
Fresh or dried herbs (I love basil)
Spices (I love paprika)
Salt and pepper
Olive oil
Optional: Avocado, Olives, Garlic.

METHOD
Preheat the oven to 180ºC and line a baking tray.
Slice the potato, zucchini, tomato and capsicum thinly, about 3-5mm thick.
Lay the potato down, single-layered, on the baking tray. Add one to 3 slices of the zucchini, tomato and capsicum. Along with other desired toppings of choice. Sprinkle on some dried basil, paprika, salt and pepper. Drizzle with olive oil.
Bake the mini pizzas in the oven for 25-35 minutes or until soft and golden.
