Mashed sweet potato


INGREDIENTS

  • 320g sweet potato (peeled weight)

  • 1 tbsp water

METHOD

Add extra water to the base of a steaming basket and place on high heat until it boils.


Meanwhile, roughly cut the sweet potato into chunks and remove all potato peel (the end weight should be 320g).


Add cut potato to the steaming basket and steam for 15 minutes or until very soft.


Place the steamed potato into a bowl and mash with water.


*The mashed sweet potato should form thick-ish consistency - not thick but not a thin mash either. If not, add a little more water until a consistency as pictured is achieved.


This recipe makes around 320g of Sweet Potato Mash - perfect for Brownie Bites.
